Having your current gym give you recommendations and even calling the gyms for you is a great idea. If you haven't already noticed the gym world is small, and many gyms know of other gyms all over the place that they would be happy to help you out with!
Good luck with your search, and kudos to you for keeping your kid in a sport even though you have to move so often :)
 
Re meal ideas- on gym days we always give my kids a hot thermos meal of leftovers for school lunch so I know they had one good solid meal for the day. Then they get a snack on the way to gym, at gym, and after gym. They get typical lunch food - waffles (we make and freeze whole grain ones), pb sandwiches and nut/seed mixes (in the car, not at gym), yogurt, whole grain crackers, fruit, veggies, taco salad, chicken wraps, dried chickpeas, dry cereal, turkey pepperoni, hard boiled eggs, bread/buns/bagels, whole grain muffins...
