My non-gymnast child was involved for two or three years with EPGY, a Stanford online program, while being homeschooled. We have nothing but wonderful things to say with our Stanford experience. My child LOVED the program and we wouldn't think twice about enrolling in another Stanford online program.

I would highly recommend Stanford!!
The EPGY math program is no longer run by Stanford. They sold it. It is now: giftedand talented.com

But Stanford still run the online high school: https://ohs.stanford.edu/

I couldn't get this site to load. It is probably because I am viewing on an iPad. So, here is a question. Do the NCAA course eligibility concerns just begin with middle and high school courses? Or do they extend all the way back to elementary school?

just high school unless your child takes high school classes on middle school.
 
^^^^ yes, just course they are taking to meet HS requirements for the core classes required by NCAA ^^^^
