Extra virgin Olive oil?Chopping up the zucc, toms and garlic. Roasting it in seasoned olive oil for 25 mins at 450. Cooking pasta, rinse in cold water, toss in pesto, mix with veg and then toss on Parmesan and bake for 15 mins. Dinner in one dish.
Would add basil, but garden is bare.

No zucchini here because the dastardly squash bugs infiltrated the whole garden yet again. Awful little buggers suck the life out of everything in their path. Cucumbers, zucchini, pumpkins, melons. I read that as 'green bears' and was slightly worried. Then I got to the part about eating abandoned zucchini children. This thread is sublimely random. Hooray!Only green beans survived this year. The zucchini was left at my front door like an abandoned child. So I ate it!

I tried making lasagna soup for dinner and it didn't work.
Lasagna soup sounds bizarre, but good at the same time.
Agreed... please share the soup recipe. It's a bit warm for it now, but will be wonderful come Autumn.
