Does anyone know if there is a way to "test into" Xcel Platinum without having to meet the age Requirement for Xcel Platinum? For example, if a 7 yo has all the skills to compete Platinum but the min. age is 8 yo...

Why would one need to do this? Why not compete Gold until old enough for Platinum. Or compete JO. I think in JO you can compete Levels 4-7 as a 7 year old.

That is the other option but there are no Xcel Golds in her gym so she would have to compete alone.

If she is talented enough to do platinum at 7, I'd probably consider JO.

Is JO not an option? I don't think there's any way around the age rules, so she would need to compete at Gold level until she turns 8. But like PP said, she could compete 4-7 as a 7yo. If she's super talented she might even be able to score out of 4 and 5 quickly and go right to 7 since 6 can be skipped.
