I have my back tuck off the beam as my dismount, but it is long and not very high. When I jumped upwards in the past, I hit my head on the beam.

If you're hitting your head on the beam - that's telling me you're throwing your hips forward or buckling your ankles/knees. Engage your core and block your arms at the top of your set.
