That totally sounds like something I would do. I swear, I will never learn.... I would definitely ask for help, maybe offer to teach a 'sewing class.' I've taught little girls sewing by making scrunchies before.
OK, so for me the most time-consuming part is turning them right side out. If nothing else, what if you sewed them down the side and one end, sewing the elastic into the closes end. Then bring them to the gym and have parents turn them right side out and safety pin the other elastic end around so it's in a circle. Then all you have to do is sew across to close them. I bet you could crank them out really fast that way.
And...er...good luck. I would totally help if I was closer as well.
